Oat Cookies

I have a separate Instagram account where I post pictures of the food I cook. I started it when I realised I liked cooking but did not want to fill my main account with food pictures. The account is called Foodnotes, to go with Fieldnotes, this blog. The username is food_n_oats, a pun on “foodnotes” and “food and oats.” I am not linking the account because I am planning to leave Instagram soon.

Except, I hate oats. I started hating them because they were one of my go-to breakfast options in college. Once I had my own kitchen, I swore never to cook the things I survived on in college: khichdi, instant noodles, oats, cornflakes, muesli. I see any of these things, I run. Yet, every now and then, I buy oats again. I have no idea why. The quest then becomes finishing the packet before it expires. This recipe came out of that quest.

Here is the recipe, in the order that I actually made it. Following preparation makes about 9 to 10 cookies that weigh approx. 40 g each (post baking).

Sl. no. Ingredient Volume/weight To-do
1. Milk 1/2 cup or 125 g Warm the milk. I used the microwave.
2. Dates (deseeded) ~8 no.s or 50 g Add the dates to the warm milk. Dates are for sweetening. You can add more or less depending on how sweet you you like your cookies. You can also choose to used other sweeteners like sugar, jaggery, honey, or maple syrup.
      Let the milk+dates mixture sit for ~5 min (until the dates soften). Smash the dates slightly using a spoon.
3. Oats 1 cup or ~90 g Grind into a flour using a mixer and add to the mixture. Mix well
  Oats 1/2 cup or ~45 g Add to the mixture. Mix well
4. Baking powder 1 tsp. Add to the mixture. Mix well

optional chocolate chips   Add to the mixture. Mix well. I had half a block of amul dark chocolate lying around, so I chopped that up and threw it in.
  seeds, nuts   After making the dates+milk mixture I realised that the packet of oats I had cames with flaxseeeds and almonds. You can add those things if you like. I would have preferred it without all thise ‘healthy’ ingredients

      Preheat your oven to 180 C. Bake at 180 C for ~10-12 minutes. 6 dollops of cookie dough on a baking tray lined with baking sheets
